GUACAMOLE RECIPE
I used to go to Cantina Loredo just for their table side guacamole. Then, my husband asked, "why don't you just make it at home?" The search was on for the perfect guacamole recipe. It took several attempts but I finally figured out the correct ratio of ingredients.
Couple of blogs ago, I made the statement that a few people consider my guacamole to be the best in town and since I love sharing good information I put together a video including my tips & tricks to making my delicious guacamole.

Ingredients: (I buy almost all of my ingredients at Fresh Fields Farm)
2 Ripe Avocados (Costco has had the best deals on avocados)-mashed
1 head of garlic (if from fresh fields, half a head)-minced
1/2 jalapeno (depends on your spice level, if from fresh fields, use only 1/4)- seeds removed, minced
1/2 large onion- chopped
1 tomato or 2 roma tomatoes- seeds removed & diced
1 bunch of cilantro - finely chopped
Salt & Pepper- to taste, I use about 1 tsp salt & 1/2 tsp of pepper
Lime juice- optional
Directions:
- In a medium bowl, mash together the avocados, salt & pepper.
- Mix in the garlic & jalapeño peper.
- TIP- I put the jalapeno in a garlic masher to ensure no one gets a chunk of a really spicy pepper. Be sure to turn the garlic masher side ways because the juice from the pepper will spray. If you notice, I use very little because the jalapeño from Fresh Fields Farm is VERY spicy.
- Gently mix in finely chopped onion (Below is a video of the method I use to cut my onions), cilantro & tomatoes.
- TIP- If you notice in the video, I keep my cilantro in a mason jar of water and cover it with a ziplock bag. This trick will keep your cilantro fresh for at least 2 weeks!! Just make sure the water doesn't touch the leaves, only the stems should be in the water.
- Refrigerate 1 hour for best flavor, or serve immediately.
